Ingredients:
- 500g boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tbsp canola oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp Cape Malay curry powder
- 1 tsp turmeric
- 1/2 tsp cumin
- 1 can (400g) chopped tomatoes
- 1/2 cup chicken broth
- 1/4 cup coconut milk
- Salt and pepper to taste
- Fresh coriander, chopped (for garnish)
Instructions:
- Heat oil in a large pan or pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger and cook for 1 minute more.
- Add curry powder, turmeric, and cumin and cook for 1 minute, stirring constantly, until fragrant.
- Add chicken and cook until browned on all sides.
- Stir in chopped tomatoes and chicken broth. Bring to a simmer, then reduce heat and cook for 15 minutes, or until chicken is cooked through and sauce has thickened slightly.
- Stir in coconut milk and season with salt and pepper to taste.

- 500g Boerewors sausage

- 1 can (400g) mixed beans, drained and rinsed
- 1 tbsp curry powder
- 1/2 tsp chili flakes (optional)
